The Pancake Chef, a beloved diner in SeaTac, will close its doors for the final time on September 28, concluding a remarkable 65-year journey. Owner Loren Sisley, who has led the establishment for over four decades, is retiring, prompting the closure of the family-owned landmark. The diner has served as a significant community gathering place, known for its comfort food and friendly atmosphere. Longtime resident Fuzz Hill expressed sadness about the loss of another local family business but congratulated Sisley on his retirement. Last year, KOMO News recognized the diner as a “Northwestern gem,” emphasizing its vintage charm and the long-standing dedication of its staff.

The restaurant opened on July 4, 1959, as part of the Clarks' Restaurant chain, and has maintained its original character throughout the decades. Its motto reflects a commitment to quality food and service, which has resonated with generations of customers. With the closure, locals will lose a cherished spot that has been a staple in the community for decades.
