UI students fight food insecurity with new surplus food network
University of Idaho students have initiated a Food Recovery Network chapter to tackle food insecurity and minimize waste on campus. Volunteers collect surplus meals from The Eatery, repackaging them for distribution at the Niccolls Home Economics Building. This semester, the program has successfully recovered 750 pounds of food, which is quickly claimed by students. Assistant Professor Ginny Lane stated that around 50% of the student body experiences food insecurity. The initiative not only addresses hunger but also educates volunteers on food sustainability and nonprofit operations.
Students can pick up meals without providing personal information, creating a welcoming environment. Last week, The Eatery donated Thanksgiving-inspired food items, which were eagerly taken by students. The program plans to collaborate with local restaurants and grocery stores for further outreach and impact.
