The owners, part of the Pike Street Hospitality Group, announced plans for a separate non-Mexican restaurant and bar on the ground floor, expected to launch later this summer and early fall. Each new venue aims to reflect Seattle's rich restaurant history, promising a “Capitol Hill comeback story. ” The rooftop bar will showcase unique decor, including hand-painted signage by Ben Hubard and a mural by celebrated artist Sean Barton. The owners plan to enhance the atmosphere with DJ sets and a variety of Latin music styles.

This opening contributes to the ongoing transformation of Capitol Hill's dining landscape, which has seen many beloved restaurants come and go. The Pike Street Hospitality Group, led by Travis Rosenthal, has been instrumental in shaping the local food scene since acquiring Tango in 2006. Cantina del Sol's opening signifies a renewed focus on community-oriented dining experiences in the neighborhood.
