Co-owner Scott Han highlights the restaurant’s focus on cheese-forward pasta dishes, featuring ingredients such as mozzarella, grana padano, and five-year-aged parmesan. Han, who hails from Seoul and previously co-founded Meet Korean BBQ, is leveraging his culinary experience to attract customers. The restaurant has taken over the space of Machiavelli, a beloved establishment that served the neighborhood for 35 years. Cheese Room maintains familiar price points and a no-reservation policy, honoring the legacy of its predecessor.

Alongside its pasta offerings, the restaurant boasts an extensive wine list and cocktails. The establishment aims to provide new interpretations of classic comfort foods while valuing the patronage of long-time Machiavelli customers.
