Capitol Hills Rocket Taco launches plan for big move across the street
Rocket Taco is making a significant move from its established location on 19th Ave E in Seattle's Capitol Hill to a modern space in the 19th & Mercer luxury apartments across the street. Owner Steve Rosen confirmed that the new venue will feature a state-of-the-art kitchen and an expansive patio, which are expected to elevate the dining experience. This relocation represents the end of a redevelopment effort for the historic Kingfish Cafe site, where Bounty Kitchen recently closed after struggling during the pandemic. Although the restaurant is transitioning to a new space, it plans to keep its menu and vibe intact, emphasizing quality, affordability, and speed. The anticipated opening is set for late February, coinciding with hopes of attracting a broader customer base.
Rosen highlighted the excitement around serving margaritas on the new patio, reflecting a commitment to enhancing customer experience. The move signifies Rocket Taco’s evolution while staying true to its roots, as it aims to grow in a more contemporary setting. As the Capitol Hill dining scene continues to evolve, Rocket Taco's transition showcases the resilience and adaptability of local businesses.
