Ramie, a contemporary Vietnamese restaurant, has officially opened in Capitol Hill, showcasing the culinary talents of sibling chefs Trinh and Thai Nguyen. The restaurant's innovative menu features an array of unique dishes, such as Bánh Tiêu fried bread with honey butter and crispy pork trotters served with fresh herbs. Located at 1529 14th Ave, the establishment replaces Omega Ouzeri and emphasizes creativity in Vietnamese cuisine. Jen Rae, previously with Bateau, heads the bar program, offering a selection of experimental cocktails infused with lesser-known Asian spirits. Early reviews have been overwhelmingly positive, with many praising Ramie's approach to reimagining traditional flavors.

The Nguyens aim to create a dining experience that balances familiarity with innovation, making Vietnamese cuisine more accessible and exciting for a diverse audience. As Ramie establishes itself, it looks set to contribute to the evolving food landscape of Capitol Hill. Open Wednesday through Sunday, the restaurant invites patrons to explore its fresh and refined offerings.
