8 at Ping Yang, a new Thai charcoal grill concept, is anticipated to open in late April at 1412 E Union in Seattle's Capitol Hill neighborhood, following the closure of OOLA. Owner Ben Evans, who is embracing his first ownership experience, has collaborated with seasoned restaurateur Ice Thiraphan to create a unique menu that features inventive dishes like Dungeness crab cakes with Phuket curry sauce and Thai tea crème brûlée. The duo aims to establish a casual dining environment that still delivers the quality and presentation associated with fine dining. Evans expressed excitement about learning from Thiraphan, who has a rich history in the Seattle restaurant scene. The location has seen a series of changes, providing an opportunity for the new venture amidst a competitive landscape of Thai eateries nearby.
