Capitol Hills new Roma Roma by-the-cut pizza joint (and the super Brunton brothers) preparing for January debut
Roma Roma, a new pizza restaurant by the Brunton brothers, is set to debut in January 2026 on Capitol Hill. Chef Forrest Brunton and his brother Colin will serve Roman-style pizza by the slice, with each order sold by weight, showcasing eight to ten varieties daily. The menu will feature creative toppings such as The Brooklyn with pepperoni cups and Carnitas Nacho with citrus-marinated pork. Guests will experience elevated counter service with options for dine-in or takeout, while Italian beverages will include tap cocktails and house-made sodas. The Brunton brothers aim to evoke a lively yet relaxing atmosphere reminiscent of dining in an Italian piazza, complete with classic Italian films as a backdrop.
Roma Roma marks a return to Seattle for Forrest and a reunion project for the brothers. The restaurant will be located in the 12th Ave Arts building, where the former Rachel Ginger Beer operated. The expected opening aligns with the growing trend of unique dining experiences in Seattle.
