Seattle, WALocal News

Insomnia Cookies will open a new location at 1513 Broadway in Capitol Hill, targeting Seattle University students and local nightlife crowds. The shop will join Pride Place, a development that focuses on affordable housing for the LGBTQIA community. Insomnia already operates a location near the University of Washington, which serves late-night cookie cravings with hours extending until 1 AM or later. The chain has gained popularity for its emphasis on freshly baked cookies and delivery. Following a recent acquisition by a private equity firm, Insomnia aims to expand its footprint both domestically and internationally.

The new shop will enhance the growing cookie market in Seattle, where craft cookie shops have seen increased demand. Insomnia's pricing strategy includes cookies priced at approximately $2. 95 each. The Capitol Hill location is set to open in the fall of 2024, contributing to the vibrant local food scene.
