Gokan by Musashi, with a focus on the art of sushi, opens on E Union
Jun Park, the owner of Musashi, debuted his new restaurant Gokan on Capitol Hill, Seattle, focusing on innovative sushi and a unique dining experience. Gokan combines traditional Japanese elements with modern design, featuring tatami rooms and a stylish bar area. Park, who has a background in microbiology, discovered his passion for the restaurant business while helping his family during financial struggles. He emphasizes the importance of artistic presentation in sushi, allowing chefs the freedom to creatively plate their dishes. Head chef Kuk Kim plans to use less common fish varieties to set Gokan apart from competitors.
The opening of Gokan coincides with a wave of new dining options in the Pike/Pine area, including upcoming facilities like Chophouse Row and Optimism Brewing. Park believes that the rapid development of the neighborhood presents opportunities for his business. He aims to offer a fresh dining concept that encourages customers to enjoy their meals leisurely.
