Seoul Mates Sam Park tried sushi but now hes going with his heart on Capitol Hill

Seattle, WALocal News

Sam Park has reopened a Capitol Hill sushi bar as Seoul Mates, which focuses on a Korean menu rooted in his heritage. The restaurant, located at 954 E Union, features traditional dishes such as Galbijjim, Seolleongtang, and Bulgogi, aimed at connecting patrons through food. Initially considering closure, Park decided to renovate and relaunch after no buyers emerged, emphasizing his belief in the neighborhood's potential. This section of E Union has seen challenges, including the shuttered Bateau steakhouse, but Park remains optimistic about Seoul Mates' future. The restaurant offers extended hours with late-night service until 2 AM, including cocktails and small plates.

Park notes a growing community of Korean food and drink establishments in the area, attributing some of the trend to cultural phenomena like K-pop. The opening comes amid plans for the Broadway Crisis Care Center, which may impact the neighborhood's dynamics. As the restaurant settles in, Park focuses on establishing a successful presence in the evolving Capitol Hill landscape.
