The bakery features three daily bakes, ensuring that customers receive pastries straight from the oven at various times throughout the day. Poulin's meticulous crafting process highlights the importance of quality butter, which he sources from New Zealand due to trade policies affecting costs. The partnership with Metier, a local bike shop, allows him to tap into Capitol Hill's trendy demographic, which seeks innovative food experiences. Signature offerings include a protein-packed sandwich designed for cyclists, alongside popular items like pain au chocolat.

The collaboration began with a summer pastry service and has evolved into a full operation from Wednesday to Sunday. Poulin aims to enhance the experience further by applying for a liquor license to offer happy hour service.
