Statesides take on French Vietnam by way of Capitol Hill joins the mix in Melrose
Stateside, a new French-Vietnamese restaurant, will debut this Thanksgiving weekend on Pike Street in Seattle's Capitol Hill district. Chef Eric Johnson, who has an impressive culinary resume including stints with Daniel Boulud and Jean-Georges Vongerichten, will offer a menu that melds traditional Vietnamese dishes with French and Chinese influences. The restaurant occupies a 2,400 square-foot space that was once used for offices and parking behind the McMenamins tavern. Local officials, including the mayor and governor, have supported the restaurant's development, highlighting its importance to the area’s food scene. Stateside joins a vibrant culinary landscape, which will soon include a new Starbucks Reserve Roastery and Serious Pie by Tom Douglas.
