Junbis matcha and soft-serve set to fill in a little piece of E Pike

Junbi, a matcha franchise with Japanese roots, is set to open a café on Capitol Hill, Seattle, this summer, filling a gap left by recent business departures. The café will offer matcha and soft-serve ice cream, occupying the space previously held by Rey Amargo. Owner R. J. Realubit aims to revitalize the neighborhood post-pandemic, as nearby establishments have also recently closed.

With 13 locations nationwide, Junbi is planning further expansion in the Seattle area. Realubit, who attended Seattle University, considers Capitol Hill a second home, appreciating its walkability and young demographic. The café has signed a five-year lease and will conduct a soft launch in mid-August.
