Co-owners Celeste Bakr and Jose Larios partnered with their uncle, Ricardo Castaneda-Garcia, who has decades of restaurant experience, to fulfill a long-held dream. The restaurant emphasizes generous portions, with Bakr stating that serving large meals is a "love language" in Mexican culture. She discovered the location, once home to Plum Bistro, and felt an immediate connection to the space. Colibri's name is inspired by Ricardo's childhood memories of hummingbirds, symbolizing abundance.

The restaurant aims to stand out in a vibrant dining scene, offering something unique compared to its vegan predecessor. With a commitment to quality and community, Colibri is open daily for lunch and dinner, enhancing the culinary diversity on 12th Ave. The establishment joins a dynamic neighborhood landscape, promising to be a beloved spot for both locals and visitors.
