Ramie, a Vietnamese restaurant in Capitol Hill, celebrates a successful first year, receiving positive feedback from the community. Co-owner Trinh Nguyen shared her excitement about their culinary journey, emphasizing their commitment to introducing lesser-known Vietnamese dishes prepared with local ingredients. The restaurant has retained popular menu items like coffee rubbed ribs and yellowtail crudo while adapting portion sizes to align with local dining expectations. Nguyen noted that many Vietnamese guests are surprised by their innovative presentations of familiar dishes. She described Capitol Hill as a progressive area for new culinary ventures.

Looking ahead, the Nguyens plan to refine their menu and enhance employee training to improve service. They recently introduced a four-course tasting menu for newcomers to Vietnamese cuisine. Ramie operates Wednesday through Sunday at 1529 14th Ave and encourages diners to explore their unique offerings.
