Tokuni, a Japanese restaurant specializing in tonkatsu and donburi, opened on October 1 in Lynnwood, Washington, founded by Vitaitip “Goi” Sophonsiwong and her friend Lynn. The duo aims to replicate the authentic cooking experiences they enjoyed in Osaka, Japan, using primarily imported ingredients. Goi, who previously owned 24 Star Thai Cuisine, faced delays due to communication issues with contractors and tariffs affecting ingredient shipments. With tonkatsu preparation requiring 15 minutes, patrons may wait up to an hour for their meals, highlighting the restaurant's commitment to quality. Goi's focus on customer feedback is critical for future growth and the potential for opening additional locations.

Lynn, who has experience cooking in Japan, collaborates with the kitchen staff to ensure authenticity.
