Hillmanns Bagels to Open in Downtown Everett

Everett, WALocal News

Hillmann’s Bagels will open in Downtown Everett at 2718 Colby Ave, replacing the Strawberry Patch Cafe, which faced closure controversies last year. Katherine Hillmann, who owns South Fork Baking Company, plans to introduce a unique bagel experience with hand-shaped, kettle-boiled, and freshly baked products. While the opening date remains uncertain, the signage suggests a launch by the end of the year, indicating responsiveness to local dining needs. South Fork Baking Company, which debuted in 2023 near the waterfront, has established a strong reputation with favorable reviews. The expansion into this new location signals an effort to diversify breakfast and lunch options in Downtown Everett.

The previous café's closure raised concerns about the building's condition, but it seems those issues are resolved. Hillmann’s Bagels aims to attract both locals and visitors, contributing to the area's culinary landscape. This venture reflects the ongoing evolution of Downtown Everett as a vibrant dining destination.
