Bar Bambi is preparing to open in West Town, led by veteran bartender Katie Renshaw, known for her work at top Chicago establishments. The bar will replace Empanada Mama at 1703 W. Chicago Ave. and aims to launch by early 2026. Renshaw plans to incorporate scientific techniques, such as forced carbonation, to elevate classic cocktails without making them overwhelming for patrons.

In addition to cocktails, Bar Bambi will feature a curated wine selection emphasizing champagne and natural wines, as well as a menu of elevated bar food influenced by global flavors. Renshaw's motivation to open her own bar was fueled by the struggles faced by smaller owner-operated venues during the pandemic. She hopes to foster a welcoming environment that feels inviting year-round, with a dynamic interior designed by Gensler. The bar will also provide mentorship opportunities for emerging bartenders, addressing the loss of personal mentorship in the industry. Bar Bambi will operate until midnight on weekends, with earlier hours during the week.
