The Western Bar & Kitchen has officially launched in North Center, taking over the former Celtic Crown pub space. Owners Farrell Walsh and Kyle McCabe crafted the venue to provide various unique experiences for patrons, including a lively main bar, a pool lounge, and a cocktail room. The menu features dishes inspired by the Sonoran Desert, such as barbecue prawns and a distinctive burger with bacon jam, showcasing Walsh's culinary influences from his time in Tucson. He aims to differentiate the offerings from existing Mexican cuisine by infusing Sonoran flavors into traditional bar fare. The cocktail program highlights tequila and agave-based drinks, with creative options like the Rosarita and Desert Roadrunner.

Walsh, who also serves as the artistic director of CIC Theater, plans to unveil an additional cocktail bar and a performance space in phases, with the theater set to open in the fall. This initiative promises to enrich the local cultural scene, providing a platform for improv comedy and creative performances. The establishment's grand opening reflects a significant development for the North Center neighborhood.
