Cheese Board Turns West Loop Residents Hobby Into Business

Chicago, ILLocal News

Grace Shaf opened Cheese & Board in Chicago's West Loop, transforming her passion for cheese into a successful business after the sudden death of her brother. The shop, which opened on July 1, offers over 70 cheese varieties from around the world, including unique options like baked potato-inspired Höhlenkäse. Shaf, who previously worked in finance, pursued cheese education programs to gain expertise, earning certifications from the Academy of Cheese and the Cheese Scholar program. She enlisted the help of cheesemonger David Phillips, whose 20 years of experience enriches the shop's offerings. Customizable cheese boards, serving groups of two to ten, are a key feature, allowing customers to personalize their selections at prices ranging from $70 to $200.

The location's visibility and foot traffic in the West Loop enhance its appeal. Shaf envisions expanding Cheese & Board to include natural wines in the future. Her journey reflects a blend of personal passion and community support in the heart of Chicago.
