After 35 years of service, Unforgettable Edibles Catering has closed its kitchen in Edison Park, marking a significant loss for the local community. Owners Mary O’Connor and MaryEllen Stanton decided to close the business after realizing it was time to slow down. They expressed gratitude for their successful run, which included catering countless family events and organizing community activities. Many staff members will transition to Tasty Catering, ensuring some continuity for loyal customers. O’Connor and Stanton became integral figures in the community, with O’Connor also serving as president of the Edison Park Chamber of Commerce and on the City Council.

The closure sparked an outpouring of memories from patrons who cherished the duo's involvement in local milestones. O’Connor noted the positive changes in downtown Edison Park, which has transformed from a struggling area into a thriving restaurant row. Their journey began in 1990, when they started catering from their parents’ kitchens and evolved into a beloved business known for its Irish specialties.
