Civility & Unrest, a prominent craft cocktail bar in Bellevue, Washington, is set to reopen its doors on October 14 after enduring a seven-month closure due to the COVID-19 pandemic. Proprietor Jason Wilson, while retaining ownership, has entrusted the management to Executive Chef Scott Emerick and pastry chef Tanya Emerick, who are determined to revitalize the menu with bold and innovative flavors. The new offerings will include a dinner menu from Emerick's other restaurant, The Lakehouse, featuring elevated late-night dishes and hyperlocal ingredients. General Manager Josef Dietrich is also pioneering a fresh approach to cocktail culture, introducing seasonal menus that highlight local products like Washington apples and honey. Straying from traditional bar norms, Dietrich envisions a space focused on exceptional service, ambiance, and culinary creativity rather than the typical sports bar atmosphere.
