With a new home in the city, Kokos now open on Capitol Hill

Koko's restaurant officially opened on Capitol Hill, marking its expansion after pandemic-related delays. Owners Gibran Moreno and Alexi Torres aim to create an inclusive space that appeals to diverse patrons, particularly in the LGBTQ+ community. The restaurant features a menu enriched with Mexican and Salvadorian flavors and a vibrant atmosphere filled with art and greenery. Moreno noted the challenge of finding late-night dining options, expressing hopes to keep the kitchen open until midnight on weekends. Their previous establishment in Seabrook, Washington, faced disruptions due to the pandemic, but they successfully supported the community through meal programs.

The couple learned the value of community engagement and inclusivity, which they aim to implement in their new venue. Support from neighboring businesses has already been evident, with collaborations planned for upcoming events like Pride. Koko's is located at 1201 10th Ave and seeks to foster a welcoming environment for everyone.
